Paul Marcus Wines - Bay Wolf
|

The next PMW wine dinner will take place at the Bay Wolf on Wednesday August 2 at 7:00 PM. This dinner features pinot noir and chardonnay from Domaine Charles Audoin in Marsannay.
Marsannay is the appellation at the far northern end of the legendary Côte d'Or in Burgundy, just north of Fixin and Gevrey-Chambertin and just south of Dijon. Marsannay is the source of some of the best values in Burgundy - wines that drink well young and that don't cost an arm or a leg. From the best producers, such as Domaine Charles Audoin, comes elegance and drinkability at a weeknight wine price.
Cyril Audoin will be there to pour and talk about his wines and help us enjoy a convivial evening.
The wines:
2005 Marsannay Rosé
2004 Marsannay Blanc 'Aux Champ Salomon'
2002 Marsannay Rouge 'Cuvee Marie Ragonneau'
2003 Marsannay Rouge 'Longeroies'
2003 Marsannay Rouge 'Clos du Roy'

The food:
Gougères & Duck Liver Flan
Goat Cheese Salad
Swordfish with Summer Tian
Roast Rack of Pork
Cheese & Grapes
Cookies
Chef Michael Wild has worked his usual magic in preparing a Burgundy-friendly menu to accompany the wines. The total cost, including all food, wines, tax, and tip, is $105. Payment to PMW in advance is required to reserve your place.

From Jay Latham of Martine's Wines: "Cyril Audoin made his first wine when he was 15, and 12 years later he seems to have the touch of a vigneron as old as the hills of Burgundy. The fifth generation in his family to make wine, Cyril has now taken the reins of the estate. His ascension seems to parallel closely the also youthful history of Marsannay as a village. In fact, it is the passion for terroir and wines of balance and depth from men like Cyril that has put Marsannay at the forefront of exciting new wines coming out of Burgundy. As the established names of Burgundy rush to the Porte d'Or (the 'Golden Gate', as Marsannay is known) to throw their hats in the gold rush, they will find Cyril holding the keys that unlock the terroir of this exciting village."
